This is a great meal for vegetarians along with anyone who enjoys a good salad for lunch or to accompany a sandwich. The recipe was developed in western Canada and sent to us as a suggestion for our Kitchen menu. It has been a great hit with customers. Made with lentils, chick peas, slices of orange, and finely chopped apricot and dried cranberries.
